Helmed by acclaimed head chef Raymond Tan, who spearheaded well-known Japanese restaurant Sushi Jin, as well as Sushi Murasaki and Kurama Robatayaki. Known for his exquisite and contemporary culinary techniques, each dish has all the hallmarks of his unique style.

Selecting fresh, quality produce and delivering it with the aim of elevating every ingredient, Hiryu's team creates dishes believing that it is more than just food but also an artistic practice.
